1 cup plain 0% or 5% Delta Greek Yogurt
7 tablespoons all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1⁄2 teaspoon salt
2 large eggs
1⁄2 teaspoon vanilla extract



Place the Delta Greek Yogurt in a medium bowl and add flour, sugar, baking powder and salt. Stir gently until mostly combined

In a separate bowl, whisk the eggs. Add vanilla to eggs and stir to combine. Pour egg mixture into the yogurt-flour mixture and stir together gently – doesn’t have to be thoroughly combined

Spray griddle or pan with cooking spray and pour ¼ cup of batter at a time

Cook for 1 to 1 ½ minutes, flip, and cook another 45 seconds

Remove to a plate and repeat until batter is gone

Top with your favorite toppings and enjoy! Opa!!
